
Tapas bringing their "pure"

Paco Roncero, winner of the Best 2006 Future Leader of the Academy of the international gastronomy and Chief of La Terraza del Casino in Madrid, has Estado Puro open to tapas in their "pure." Roncero, who studied with Ferran Adrià and is considered the most notable protégés of celebrity chef, opened estado puro combine classic tapas ingredients using the most high quality and signature touch of creativity. He hopes to open more such as bars throughout Spain and abroad.
The the place is decorated with upscale, cosmopolitan decor and architectural designer James & Mau 1000 featuring kitschy Peinetas white, decorative combs, on the ceiling and a wall, adding a bit of an ironic twist of tapas tourist traps. Estado puro also has a space where customers can find cuisine chefs, an area of merchandising with cookbooks and Roncero deck with a selection of tapas sauces at home. There is even a terrace with a tree surrounded by a garden of tomatoes, lettuce and cucumbers. The menu includes hot and cold tapas such as croquettes, potatoes with aioli sauce and hamburgers and mini sandwiches, salads, desserts and a few larger dishes of rice, meat and fish.
Dinner with a side of celebrity
